Grand used to be the whole argument for luxury: soaring lobbies, more marble, more staff. New York State’s newest wave of hotels is making the opposite bet that charm beats spectacle, and that a guest remembers how a place felt more than how big it was. Properties from Long Island to the Adirondacks are leaning into that idea.
It’s a venture that plays out differently at each property, but the throughline is the same: architecture and interior design doing the work that used to belong to scale and shine. Cedar-clad cabins, restored farmhouses, preserved stonework, glass walls that turn a forest into the view. None of it is loud; all of it is intentional.
That connects to where travelers themselves say they want to be. Booking.com’s latest travel predictions found that 43% of travelers are choosing trips specifically to feel closer to the natural world, with a quarter turning to quieter, slower pursuits on vacation, part of what the company calls a broader pull toward restoration over stimulation. New York’s design-forward hotels are the physical version of that same instinct.
Old structures, new language
Some of the state’s most compelling properties are built on top of what was already there. INNESS, spread across 220 pastoral acres in Accord, took its cue from the historic Dutch farmstead architecture that defines the region and reworked it for a distinctly modern eye. Brooklyn-based Post Company designed cedar-clad cabins and pitched-roof structures that nod to the area’s agricultural past, with lime-washed interiors and custom furnishings throughout.
Hotel Corduroy took a similar approach using a different vocabulary. The Montauk property, originally built in 1983 as the Sunset Montauk, was redesigned by Blue Flag Capital and design firm Ward + Gray into a 29-room retreat that channels surf culture and maritime heritage through deep-sea teals, corduroy greens and sun-faded golds, evoking the coast through subtle details rather than overt nautical themes. It marks Blue Flag’s first boutique property outside Martha’s Vineyard and Nantucket, extending a coastal design sensibility to Long Island’s East End.
Design as the destination
At other properties, the design itself is the draw, and Piaule Catskill takes that literally. Garrison Architects designed the property’s modular cabins to sit elevated above the ground, with a glass-forward approach built around full nature immersion. The aesthetic draws on Japanese and Scandinavian minimalism, letting structure and setting carry the experience rather than ornament.
The Inns of Aurora takes the opposite material approach to the same end goal. Set on Cayuga Lake in the Finger Lakes, the MICHELIN One Key-designated resort restored a collection of 19th and early 20th-century homes, adding museum-quality art and bespoke interiors rather than stripping away the history. Hart Howerton’s design for the property’s spa, inspired by Ayurveda and the surrounding Finger Lakes scenery, has earned WELL Gold Certification, extending that same instinct for restraint into its wellness offering.
Grand scale, regional roots
Some properties operate in an entirely different scale, proving that thoughtful design isn’t only a boutique-hotel instinct. The Sagamore, perched on its own 70-acre island in Lake George, blends Gilded Age grandeur with Adirondack warmth: wood finishes, residential-style furnishings and legacy detailing throughout a property that’s welcomed generations of travelers to the region.
Troutbeck, set on a 250-acre estate in Amenia dating to the 1700s, arrives at the same idea differently. Champalimaud Design preserved original stonework and oak paneling while adding warm, residential interiors that make the estate, once a gathering place for writers including Mark Twain, Ralph Waldo Emerson and Ernest Hemingway, feel lived-in rather than staged for effect.
Where this goes next
None of these properties are chasing the same aesthetic. What they share is a bet that guests are done being impressed and would rather be moved. As more travelers look for stays that feel specific to a place rather than replicable anywhere, design is becoming what operators compete on instead of scale.
That’s a meaningful change for a state whose hospitality identity has long centered on New York City’s density and spectacle. Increasingly, the more interesting story is happening upstate, on the coast, and in the mountains, where a hotel’s floor plan is doing as much of the work as its concierge desk.
