Built in 1661, the Canal du Midi is a 17th-century engineering marvel that still functions today like it did when it was first built. In 1787, Thomas Jefferson, then Ambassador to France, visited and studied the Canal du Midi as a model for a potential similar project in the United States. By the 1980s, the canal transitioned into a popular tourist destination, and it remains one of the most visited recreational waterways in France.

Wearing a jaunty beret, patriarch winemaker Xavier proudly guides guests through the winemaking process from grape to bottle, ending with a tasting in the unprepossessing cellar that is as much a workspace as it is a space for visitors.
Accompanied by regional wines, the food on the Athos is a cultural experience as well as a culinary one. Each morning, crispy bread and pastries are purchased from the local boulangerie while guests are still in bed. For lunch and dinner, the chef develops the menus using locally sourced, in-season products.
A barge kitchen doesn’t have much storage space, but nearby farmers markets sell fruits, vegetables, cheeses and meats to provide a constant bounty for the table. The resulting dishes highlight fresh ingredients and are intensely flavorful without being overly complicated. And since this is France, both lunch and dinner feature a broad selection of cheeses.
