Tailgate parties could be in for a serious upgrade this football season, and it has nothing to do with the grill. Backyard BBQ trends this year point toward fuller spreads and bolder flavor combinations, from smoked sides to sweet-heat sauces and globally inspired flavors. Sept. 5, National Tailgating Day, gives fans a reason to bring some of that inspiration into the stadium parking lot.
Fans looking to move beyond a bag of chips can bring more of their home-kitchen habits straight to the parking lot. The cooler that once held hot dogs and a case of soda can now hold several proteins, a rotation of sauces and a side dish that took real planning to pull off.
A recent survey of nearly 200 avid BBQ enthusiasts and backyard pitmasters found how that habit has become year-round. Half say they cook with BBQ flavors multiple times a week, and more than 80% do so at least monthly, treating grilling and smoking as a near-constant, year-round hobby. Nearly 80% also customize their cooks with multiple rubs, sauces and seasoning combinations, the kind of layering a tailgate spread could easily borrow this season.
The day also has real fan roots behind it. It was created in 2016 by Luke Lorick, president of the tailgating company Tailgating Challenge, who wanted pregame parking lot gatherings to have a calendar spot of their own. The Registrar at National Day Calendar proclaimed it for the first Saturday of September each year. In 2026, that falls on Sept. 5.
Sides move from cooler to main event
Staples like smoked mac and cheese, loaded tots, jalapeno poppers and pit-smoked beans are becoming part of the actual cook, planned right alongside the main protein. Vegetables are getting similar treatment, with grilled cauliflower steaks showing up as a real menu item. Tailgate cooks could put that same planning to use, budgeting extra grill or smoker space before kickoff, not just extra cooler space.
Budget cuts step up for tailgate menus
Protein choices are moving in a different direction too, and it isn’t toward pricier cuts. Many backyard cooks experiment with tri-tip, pork shoulder steaks, sirloin and smoked chuck roast; cuts that aim for the same smoky payoff at a more approachable price.
More than half of survey respondents also rely on a dedicated smoker, which is a separate sign of how much technique now goes into home cooking. For tailgate planning, the centerpiece protein doesn’t have to be the priciest item on the shopping list to deliver the flavor a crowd expects.
Smoke profiles and sauce loyalties run deep
Hickory and mesquite ranked as the most popular smoke profiles in the survey, ahead of sweet-savory blends, garlic and herb combinations and layered umami flavors. That same investment shows up in what people expect from their seasoning too, with rubs built to hold their flavor through hours of smoke, even on cooks that run half a day or longer.
St. Louis- and Kansas City-style sauces together account for roughly a third of the reported regional sauce preferences. Fans who argue about barbecue styles the way they argue about their teams could find plenty to debate this season.
Sweet heat and global flavors take over
Sweet-and-spicy pairings built around cherry, hot honey and pineapple rank among the most requested emerging flavor profiles, alongside a growing appetite for Korean-inspired and Caribbean jerk influences. The classics aren’t disappearing, though, as backyard cooks fold those global flavors into ribs, pulled pork, smoked vegetables and BBQ sides. It’s the same mix that could easily land on a tailgate table this season, with hot honey leading the way.
Nostalgic flavors show up in new spots
One of the more playful trends in the survey turns familiar flavors into unexpected menu items. Root-beer-inspired barbecue sauces and cinnamon-sugar rubs are among the flavor combinations the report highlights, taking a flavor most people associate with dessert or soda and moving it onto a smoked protein. It’s a way to work a comfort-food flavor into a menu that’s usually built around smoke and heat, giving the dish a familiar starting point even as the pairing itself is new. For tailgate menus, it’s an easy way to add a talking point to the spread without adding a whole new dish.
Seasonings with low-sodium and no-MSG options are also entering the conversation, as the report identifies them as an emerging interest among serious backyard pitmasters. That could give tailgate cooks another reason to read the seasoning label alongside the meat label.
Planning a tailgate spread this carefully isn’t really about kickoff. Cooks who put this much thought into a cooler are doing it because the process itself has become part of the appeal, not just the result. That mindset is what’s likely to stick around long after this season’s games are decided.
