Americans are about to dust off the slow cooker, but global flavors are on this year’s menu

Weeknight dinners in September run on a tighter clock than any other month, squeezed between homework, practice schedules and bedtimes that suddenly matter again. The slow cooker thrives in that window because it asks almost nothing of the cook, babysitting dinner for hours while everyone else is somewhere else. That hands-off convenience explains why search engines can predict, down to the season, when Americans will start looking for new things to put inside it.

A pronounced climb every fall

Google Trends data shows a pronounced seasonal pattern for slow cooker recipe searches in the U.S. In a 2025 comparison, the platform assigned April an indexed value of 20 and December a peak value of 100, placing December’s indexed interest at five times April’s level. The broader trend is consistent with the annual fall and holiday increase in slow cooker searches, with September marking the start of the climb. That seasonal interest covers everything from familiar comfort foods such as Hungarian goulash to newer combinations such as Hatch chili salsa chicken.

Americans age 15 and over spend about 43 minutes a day on food preparation and cleanup on average, a figure that includes those who did no cooking that day. Women average nearly 55 minutes and men about 31. Among adults living with children under 18, employed adults spend 1.7 hours a day on household activities, compared with 3.1 hours for non-employed adults in the same households. When school starts, the parents who were home all summer become the parents racing the clock.

The pot has gone global

Birria may be the clearest example of what has changed inside the slow cooker. On restaurant menus, quesabirria mentions have surged 982%, spawning spin-offs that include birria pizza, birria burgers and birria chicken. The slow-braised Mexican dish is a natural fit for the countertop slow cooker, and home cooks have been translating it from restaurant discovery to Wednesday dinner.

In a slow cooker, birria becomes a hands-off project: seasoned beef or goat simmers for hours in a rich, chile-laced broth until the meat pulls apart with a fork, producing both the tender filling and the warm consomme for dipping. It is the kind of deeply savory, one-pot meal that rewards patience without demanding attention. A regional specialty that most Americans had never heard of a decade ago now sits in slow cooker recipe collections alongside chicken tortilla soup.

Korean cuisine is following a similar path from restaurant to home kitchen. Korean foods and ingredients now appear on 14% of U.S. menus, and the flavors are moving into home cooking fast. U.S. launches of gochujang-based products grew 120% over the past 12 months, while bulgogi went from an emerging flavor in 2025 to No. 4 on the 2026 Meat & Meals chart. 

Slow cooker Korean short ribs and gochujang-braised chicken are how those flavors cross from takeout menus to the home kitchen. Gochujang-braised chicken thighs come out of the slow cooker glazed and tender, with a sweet, fermented heat that builds slowly. Korean short ribs, marinated in soy, sesame and pear, turn fall-apart soft over a long cook, filling the kitchen with a caramelized sweetness hours before dinner.

Sixty-one percent of consumers say they want more global foods available at restaurants near them, and nearly 60% want those dishes prepared authentically. More than 70% now say global ingredients feel just as familiar as traditional American pantry staples. Cross-cultural flavors are also moving into unexpected categories, with hot honey and spicy mango among the flavors driving double-digit growth in bakery and confectionery. The slow cooker is where many of those globally inspired flavors meet the Tuesday time crunch.

What comes after gochujang

Adults ages 35 to 44, the demographic most likely to have school-age children at home, log less time in leisure and sports activities per day than any other age group, at 3.9 hours. Restaurant industry tracking already identifies Kerala and Haitian cuisines among the cuisines to know for 2026, with 42% of consumers expressing interest in trying each despite not having done so. Their growing visibility on restaurant menus gives home cooks new inspiration for slow cooker experimentation with globally sourced flavors and techniques.

The slow cooker surges every September for the same reason it always has. It asks almost nothing of the cook’s time, and in 2026, it asks nothing of their ambition either.
