Kaze restaurant reopens

Kaze, which means wind, features extensive sushi, udon, bento, ramen and noodle dishes.

Kato, who came to the U.S. 20 years ago, recently spent time in Japan learning new techniques for ramen and skewers.

Kaze’s menu is essentially the same, with adjustments to American tastes as well as refinements to sushi and more traditional Japanese offerings.

“There are a lot of third-generation Japanese here and I just want to keep more traditional Japanese style going, as well as serve tourists and locals and teach them more about authentic Japanese food,” he said. Kato said his udon and ramen especially are faithful to traditional style.

Kaze is closed Sundays, and for the summer will be open 6 to 10 p.m., with shorter hours starting Oct. 1, but Kato plans to expand to lunches next year.
