“The food we serve at Little Bull… it’s very personal,” Diaz said. “It’s the kind of food that a Mexican person, born in Chicago, that traveled throughout the country, that ended up in Durham would make.”
His philosophy reflects a broader identity. “Food is an identity,” he said. “I’m not from here, I’m not from there and I’m just carving my own lane.”

“Gocciolina is my go-to,” he said. “Chef Aaron’s approach, prime ingredients and beautiful simplicity, is genuinely inspiring to me. It’s a small, tight operation and I love sitting at the bar and watching it all come together. I always leave happy.”
It’s the kind of place where the food is great and the vibe makes you want to stay awhile.
Small Spots Doing Big Things
Some of Diaz’s favorite places are the ones that might be easy to overlook at first glance.
“They make everything in house, handmade noodles, sweets, all of it, and the craft throughout the menu is really something special,” he said. “The space is small and unassuming, which I love, but they are doing serious work in there.”
For drinks, he points to The Waiting Room, a tucked-away neighborhood bar with a thoughtful cocktail program.
“It’s a neighborhood spot, very quaint and a little off the beaten path,” Diaz said. “Head bartender Emmy Garcia puts real thought into her cocktail menu. These small spots are my people.”

If a visitor only has one night in Durham, Diaz does not hesitate to map it out, starting with his own restaurant.
“Look, Durham is full of incredible restaurants, but I would be doing myself a disservice if I did not start with Little Bull. It’s my spot, and I’m proud of it,” he said.
At Little Bull, he recommends ordering widely and sharing.
“Order a lot of small plates and share everything,” he said.
From there, the night moves into downtown. A short walk helps reset before heading to Annexe, a cocktail bar known for its DJs and relaxed energy. For those looking to extend the evening, Bar Virgile sits just upstairs, offering another opportunity to grab a bite.
The route highlights one of Durham’s defining features, its walkability and the ease of moving between restaurants, bars and late-night spots.

Mateo Tapas has long been a cornerstone, while Alley 26 continues to stand out for both its food and cocktails.

“Both places capture exactly what makes Durham’s food scene worth paying attention to,” he said.
That identity is rooted in a shared commitment among chefs and restaurant owners.
“There is so much love for Durham,” Diaz said. “Everyone is so proud of being from Durham in what they do. It really tries to produce the best.”
Each offers easy access to downtown’s restaurants, bars and nightlife, making it simple to explore the city on foot.
As Diaz continues his run on “Top Chef,” his presence reflects more than individual success. It signals a broader moment for Durham, a city that has steadily built a reputation for creativity, collaboration and a strong connection to local ingredients.
“I think Durham holds itself to a standard,” Diaz said. “We want to make ourselves proud, and we hope that Durham feels proud that we are in their city and representing the city.”
