One of red wine’s most stubborn rules is finally breaking. For decades, the instructions were simple: serve it at room temperature, treat it with reverence, never let an ice cube near it. But now, drinkers are ignoring all of it; red wine is showing up chilled, mixed into spritzes and poured over ice at backyard barbecues and rooftop bars, and the people doing it are not apologizing.
Red wine built its reputation on formality. Room temperature actually meant the cool stone cellars of old European houses, not a modern living room running 72 degrees, which means most properly served reds have been slightly too warm for decades without anyone noticing. That gap between the rule and the reality is exactly where the current shift is taking hold, as drinkers stop treating red wine as fragile and start treating it as something to actually enjoy on their own terms.
A global leader in beverage and alcohol insights has tracked a broader move toward lower-key, more casual drinking occasions, where consumers in markets like Spain are increasingly swapping out spirits for beer, wine, tinto de verano, a refreshing red wine cocktail, and spritzes. Red wine, once the most rule-bound pour on the table, is becoming one of the most flexible.
Wine cocktails move beyond sangria
Sangria has long been the entry point for mixing red wine, but it is far from the only serve gaining ground. In Spain, the “kalimotxo,” a simple combination of red wine and cola served over ice, has been a staple of the Basque Country for decades and is now finding new audiences well beyond the region. “Tinto de verano,” literally summer red wine, pairs red wine with soda for a lighter, more sessionable pour. Wine spritzes, once associated almost exclusively with white and rosé, are increasingly built around red wine too, proof that the mixing impulse is a broader rethink of what a glass of red is allowed to do, not a passing summer fad.
Red wine gets the ice bucket treatment
Campo Viejo, the Rioja producer founded in Spain in 1959, has built an entire summer platform, Spain Spritzed, around this exact shift, encouraging drinkers to enjoy its red tempranillo chilled, over ice or mixed into a spritz. Wine writer Heidi Bruaw reviewed the 2022 tempranillo, describing ripe cherry and plum aromas, smooth red berry flavors and soft tannins before calling it “a very drinkable red wine at a reasonable price.”
The Côtes du Rhône appellation made the loosening official this month with “Refresh Your Wine.” The campaign positions chilled red wine as the modern, no-rules way to drink the region’s reds, building on messaging the appellation first introduced in 2024.
Bonterra Organic Estates took a different route, building a red specifically for the cocktail glass. Its Chillable Cherry Wild Raspberry is designed to hold its own mixed with whiskey, honey and lemon over ice, proof that a red wine can be engineered for mixing rather than treated as an accident waiting to happen.
Lolli Wines skips the debate entirely. Its reds are built around the over-ice, garnish-forward serve from the start, no permission slip required.
Where the rule actually goes next
None of this means red wine is becoming less serious. If anything, the shift indicates a wine category catching up to how people actually drink: earlier in the evening, more casually, with fewer rules dictating the glass. Producers are increasingly making wines specifically intended to be served chilled, over ice or mixed into cocktails.
The old rule said red wine needed a special occasion, a proper temperature and a certain reverence. The new one says pour it however it tastes best to you, ice included, and let the wine snobs catch up. What once drew a sommelier’s side-eye is now one of the season’s most relaxed ways to drink wine.
