CARSON — For as long as Steve Waters can remember, his family has been brewing beer. He has fond memories of his dad, Jim, storing the six-gallon fermentation jugs in the family bathtub. Today he and his brother, Tom, brew many different kinds of beer out of their production facility in Stevenson. The brothers also manage three satellite brewpubs in Carson, the Pearl District in Portland, and a nearly open pub in Hillsboro.

Growing up in Carson, the Waters family operated a bed and breakfast out of their home. Soon after Steve moved to Portland to study accounting at the University of Portland, they opened a separate location across from the local grocery store on Carson. When the grocery store shuttered, the Waters were persuaded to take over the corner store. When the Waters opened the store, it was only operating at half capacity, leaving the other half empty. By the time parents Jim and Debbie Waters had sold the Carson Luxury Ridge cabins. They used the payout and a loan from the Economic Development Council (EDC) in Skamania County to finance a sort of makeshift brewery. They bought equipment and supplies and got started selling their homemade beer in July 2012. Steve says they couldn’t have started at a more opportune time.
“My theory is that the Columbia River Gorge over the 10-to-11-year span since then, has grown significantly in popularity. And we’ve just been part of that,” Steve said.
Backwoods Brewing have grown from a single barrel brewery to a 20-barrell brewing system and supply top notch beer to the Oregon, Washington and Idaho markets. They also offer cabins and the soon-to-be Party Acres at the Carson pub location. In 2020, they agreed to purchase 19 acres of land behind the pub that will be home to a number of activities. The space will be home to fire pits, a zip line, a disc golf course and small amphitheater for endless entertainment. Waters hopes to have everything ready to use in the next five years. He added that this year the Backwoods team has been aggressive making capital investments, and he wants the team to take a step back and optimize their current state of operations.

“We’ve done a lot of big capital expenses this year and we have reserve capital to be able to help us get through, but like, it’s time to chill,” Waters said.
One of their biggest investments are the newly built Backwoods cabins. All cabins have the same layout but each one has unique concept — courtesy of Steve’s wife, Michelle. Each stay comfortably sleeps two adults and two kids, with pets permitted in certain cabins. The Mountain Biker, Camper and Forager’s cabins allow your furry friends, while the Hiker, Skier, Windsurfer, Stargazer and Kayaker cabins are pet-free. Backwoods is offering promotions such as 30% off your stay if you stay three nights or longer and 15% off for military personnel.
Brewing at Backwoods is led by San Diego native, Cody Jackson and says he has perfected his craft mostly through trial and error.
“A lot of mistakes, unfortunately for Steve, but as long as we do better the next time,” Jackson said on how he figures out his recipes. He has been working in the Gorge since 2016.

He leads a crew that has fun with experimentation and the group is always looking to collaborate. Their latest partnership is with the newly created Portland Trail Blazers G-League basketball affiliate, the Rip City Remix. As of September, Backwoods Brewing is the official beer sponsor of the team. They will be serving their new Rip City Remix IPA at all home games beginning on Nov. 17. The beer was brewed with experimental hops that denote flavors of cherry, melon and citrus.
