  The final days of summer approach and our gardens are producing the best of the best, ripe tomatoes, the last of the peaches and nectarines and crunchy cucumbers. While I look forward to turning on my oven and baking some butternut, we’re not quite there yet, so enjoy the last of the summer produce in a delicious and filling dinner salad. If you read this toward the end of September and the nectarines have passed, substitute thinly sliced apples and consider adding some dried cranberries to your topping. You can also substitute corn, cut off the cob for the nectarines and make the dressing with an herby or extra virgin olive oil. There are so many options!
